Ingredients

  • Colocasia leaves – 10-12 nos.
  • Gram flour – 500 gram
  • Wheat flour – 1 cup
  • Red chilli powder – 1 tbsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 1 tbsp
  • Garam masala – 1 tsp
  • Asafoetida – 1 tsp
  • Ginger chilli paste – 1 tbsp
  • Carom seeds – 1 tsp
  • Cumin powder – 1 tsp
  • Salt to taste
  • Eno – 1 tsp
  • Oil – 1 tbsp
  • Tamarind – ¼ cup
  • Melted jaggery – 1 cup
  • Water - as required
  • Oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Sesame seeds – 1 tbsp
  • Asafoetida – 1 tsp
  • Cilantro leaves – a handful
  • Grated coconut – 1 tbsp

Method

  • First, take a colocasia leaves, then rinse a few times in water and later dry 20 mediums to large sized colocasia leaves with a kitchen napkin. And keep it aside.
  • Further place the leaf with the veins facing you and slice the middle vein right through the center.
  • Take a bowl, add gram flour, wheat flour, red chilli powder, turmeric powder, coriander powder, garam masala, asafoetida, ginger chilli paste, carom seeds, cumin powder, salt to taste, eno, oil, tamarind, melted jaggery and whisk it properly with the help of whisker.
  • While adding water step by step, stir and mix thoroughly to make a thick batter or paste.
  • Further, apply the prepared garam flour batter and place another leaf and apply the batter. Now place a third leaf and apply the batter on this leaf too.
  • After wards, fold the leaf from both the sides just like this and apply the batter. Begin to tightly roll the leaves from upwards side. Same way prepares all patra.
  • Now, set water to steam, put plate and grease the plate with oil. Then place these rolls in a greased steamer pan. Now cover and steam for 20-25 minutes in a steamer.
  • After cook check it with knife weather its proper cook or not. Afterwards, take them in a plate and keep aside to cool completely for 10 minutes. Now cut them into a pieces.
  • Now, heat an oil in a wok, add mustard seeds, sesame seeds, asafoetida and after crackling add the patra pieces, toss gently and cook on medium flame for 1 minute.
  • Lastly add cilantro leaves and grated coconut and mix it once.
