Description

Pani puri is an immensely popular Indian street food of crispy, hollow, fried dough balls (puri) stuffed with boiled potatoes or steamed moong sprouts or boiled chickpeas or white peas curry (also known as ragda) together with spicy tangy water and a sweet chutney. Ingredients

    For making Panipuri Pani:
  • Mint leaves – ½ cup
  • Fresh cilantro – 1 cup
  • Green chillies – 2 nos.
  • Spicy green chillies – 3 to 4 nos.
  • Tamarind pulp – ¼ tsp
  • Panipuri masala – 2 tbsp
  • Black salt – ¼ tsp
  • Salt to taste
  • Citirc acid (nimbu phool) – ½ tsp
  • Ice cubes – 2 nos.
  • Water – ½ cup
  • For stuffing:
  • Boiled potato – 3-4 nos.
  • Boiled chickpea (chana) – 1 cup
  • Green chutney – 1 tbsp
  • Black salt – 1 tsp
  • Salt to taste
  • Panipuri masla – 1 tbsp

Method

    For Panipuri Pani:
  • Firstly, take a mixing jar, add mint leaves, fresh cilantro, green chillies, spicy green chillies, ginger, panipuri masala, black salt, salt, citric acid & water. Now cover the jar & grind it nicely.
  • Then, strain the water through a sieve and set aside.
  • For Stuffing:
  • Take a bowl, add boiled potatoes, boiled chickpea (chana) and mashed it nicely. Further add green chutney, black salt, salt as per taste, panipuri masala. And add fresh cilantro & mix it proper.
  • Crack the top of the puris with thumb and fill the stuffing.
  • Serve them immediately as you make or else it will turn soggy.
