Mixed Veg is something that I often make when hosting dinner at home because it is one sabzi which everyone likes. Made with lots of veggies like cauliflower, beans, carrots this restaurant style mixed recipe is wonderfully spiced and pairs beautifully with homemade naan or tandoori roti. Ingredients & Method

Ingredients

  • Tomatoes – 2 no (chopped)
  • Cashew – 9-10 no.
  • Oil – 2 tbsp
  • Carrot – 1 cup
  • Boiled french beans – 1 cup
  • Capsicum – 1 cup
  • Onion – 1 no. (chopped)
  • Cabbage – 1 cup (grated)
  • Salt to taste
  • Cumin seeds – 1 tbsp
  • Dry red chilli – 2 nos.
  • Garlic – 1 tsp (chopped)
  • Ginger paste – 1 tsp
  • Green chillies – 1 no. (chopped)
  • Turmeric powder – 1 tsp
  • Red chilli powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Garam masala – 1 tbsp
  • Curd – ½ cup
  • Water – 1 cup + 1 cup
  • Punjabi masala – 1 tbsp
  • Kasuri methi – 1 tsp
  • Cilantro leaves – a handful
  • Grated Paneer -2 tbsp

Method

  • Take a blending jar add chopped tomatoes, cashew and cover it and blend it in a smooth puree.
  • Now take a wok heat up the oil, add carrot, french beans, capsicum, onion, cabbage and mix it well. Further add salt to taste and mix again.
  • Afterwards, heat up the oil, add cumin seeds, dry red chilli, garlic, ginger paste, green chillies, salt to taste and stir it well. Additionally, onion and mix it once.
  • After that . Now add turmeric powder, red chilli powder, coriander powder, garam masala and mix it well.
  • Then add curd and stir it. Now add water and grated paneer and mix it well. Furthermore, add sauté vegetables. Add Punjabi masala, water and mix it well. Cover and cook for 5-10 minutes.
  • On last, add kasuri methi for better taste. Add cilantro leaves and mix everything properly.
