Baingan Bharta

Description

Baingan Bharta is a popular Punjabi dish from the North Indian cuisine. It is made with a mash of roasted eggplant, onions, tomatoes, herbs and spices. The eggplants are roasted or grilled on direct flame over the stovetop or on red hot charcoal which gives them a smoky flavor and taste. Ingredients & Method

Ingredients

  • Eggplants (brinjal) – 1 no (500 gm)
  • Garlic – 7 – 8 cloves
  • Green chillies (chopped) – 2 nos
  • Mustard oil – 1 tbsp
  • Oil – 2 tbsp
  • Ginger (chopped) – 1 tbsp
  • Onion (chopped) – 1 no
  • Tomatoes (chopped) – 2 medium size
  • Salt to taste
  • Green peas – ¾ cup
  • Turmeric powder – a pinch
  • Red chilli powder – 2 tbsp
  • Coriander powder – 1 ½ tbsp
  • Garam masala – 1 tbsp

Method

  • Make incisions on the on the eggplant with a knife and stuff in the cavity with garlic. Apply oil all over the eggplant.
  • Now, roast the eggplant over an open flame keeping the flame low, char them until they are soft, turn and flip the sides in regular interval. Keep it in a plate.
  • Now, carefully remove the skin, and roughly chop the roasted eggplants along with garlic cloves. Cut the head from the top.
  • Now, set a pan on medium heat, add oil and add chopped onion, cook them on medium flame high flame until they start to get transparent. Further add chopped garlic and cook them on medium flame.
  • Now, add tomatoes, cook the tomatoes until they are mushy. Then add chopped green chillies and mix it.
  • Now add, the cooked & chopped eggplant, stir well and cook on medium flame for 3-4 minutes. Then add turmeric powder, coriander powder, red chilli powder and mix it well. Further add, garam masala, salt to taste and stir well & cook for 3 – 4 minutes.
  • Serve hot with roti, paratha or bajri no rotlo of your choice.
