Ingredients
- Oil – 4 tbsp
- Onions (sliced) – 2 medium size
- Cashew nuts – 10 - 12 nos
- Garlic clove – 5 – 6
- Dry Kashmiri red chilli – 2 nos
- Green chillies – 2 nos
- Tomatoes (quarters) – 3 to 4 medium size
- Salt – 1 tsp
- Water 220 ml
- Oil – 2 tbsp
- Cauliflower 1 cup (florets)
- Turmeric 1/4th tsp
- Salt a pinch
- Carrots ½ cup
- Green peas
- French beans ½ cup
- Clarified butter – 2 tbsp
- Garlic (chopped) – 1 tsp
- Green chillies (chopped) – 1 tsp
- Bay leaf – 1 no
- Cinnamon – 1
- Cloves – 3 – 4 no
- Black pepper corns – 3 – 4 nos
- Red chilli powder – 1 tbsp
- Coriander powder – 1 tbsp
- Turmeric powder – ¼ tsp
- Cumin powder – 1 tsp
- Water – ½ cup
- Salt to taste
- Fresh cream – 1 tbsp
- Garam masala – 1 tsp
- Kasuri methi – 1 tsp
- Fresh cilantro leaves
Method
- Take a wok add oil, onion cook until the onions are completely golden brown & remove the onions over the paper to absorb excess oil.
- Now add cashew nuts and roast them on medium low flame until golden brown in color. Now add garlic cloves, dry kashimiri red chilli, green chillies, tomatoes, salt & stir well. Further add water & mix it.
- Cover & cook for 10 minutes on medium low flame. After cook switch off the flame & mix it once. Now transfer mixture in a grinding jar. Also add fried onions. Add water & grind into a fine paste.
- Take a pan add oil, mix boil veggies and cook for a minute. Keep them aside. Now in same pan add clarified butter, chopped garlic, chopped green chillies, bay leaf, cinnamon, cloves, black pepper corn & sauté it on medium to low flame.
- Further add red chilli powder, coriander powder, turmeric powder, cumin powder and mix it. Add the blended base gravy & mix well. Now add water and stir well. Then add boiled veggies and Add water depending on the desired consistency of the gravy. Stir well.
- Then add salt to taste, fresh cream, garam masala, kasuri methi and mix it well. Add some fresh cilantro leaves and mix everything properly.
