Ingredients & Method

Ingredients

  • 1 ½ cup – All-purpose flour (Maida) (मैदा)
  • 1 cup – Boiled green peas (हरे मटर)
  • 3 pc – Boiled potato (आलू)
  • Salt as per taste (नमक)
  • 1 tbsp – Cilantro leaves (धनिया पत्ते)
  • 1 tbsp – Red chili powder (लाल मिर्च पाउडर)
  • 1 tbsp – Coriander powder (धनिया पाउडर)
  • 1 tsp – Ginger chili paste (लहसुन मिर्च पेस्ट)
  • ½ tsp – Asafoetida (हींग)
  • 1 tsp – Garam masala (गरम मसाला)
  • 1 tsp – Turmeric powder (हल्दी पाउडर)
  • 1 tsp -Cumin seeds (जीरा)
  • 1 tbsp – Oil (तेल)
  • Water as required (पानी)

Method

    For Dough:
  • Take maida (all-purpose flour) in a bowl, add salt to taste and some oil, and mix it well. Now add water gradually and knead it into a hard dough. Let it rest for 5–10 minutes.
  • For Stuffing:
  • Heat oil in a pan and set the flame to low. Add cumin seeds, asafoetida, and ginger-chili paste, then mix well.
  • Next, add boiled peas and mash them slightly with a masher. Then mash the potatoes with your hands and add them to the pan. Mash everything again using the masher.
  • Add red chili powder, turmeric powder, coriander powder, salt, chopped cilantro (coriander) leaves, and garam masala. Mix everything well. The stuffing is now ready. Set it aside for later use.
  • For Slurry:
  • Take 1 tablespoon of maida in a bowl, add water, and mix it well to make a smooth slurry.
  • For Final Preparation:
  • Take a small portion of the dough and roll it out. Cut the rolled dough from all four sides and then divide it in the middle.
  • Take one sheet, place the stuffing on it, and roll it gently. Apply the slurry on the edge to seal it and roll again. Repeat this process to prepare all the rolls.
  • To fry, heat oil in a pan. Once hot, dip each roll into the slurry from both sides and carefully place it in the pan. Fry all the rolls on low to medium flame until they turn golden brown.
  • Once done, turn off the flame and remove the rolls. They are now ready to serve.
