Medu Vada

Description

Medu vada is a traditional dish from South Indian cuisine served with coconut chutney and Vegetable Sambar as a popular breakfast in most of the Indian restaurants. This crispy deep fried snack is made from urad dal (black gram lentils) and a few basic spices like cumin seeds, black peppercorns, curry leaves and green chillies. Ingredients

  • Urad dal (Split black lentils) – 1 cup
  • Salt to taste
  • Water to grind dal – 5 to 6 tbsp
  • Chopped green chilli – 2 to 3
  • Ginger paste – 1 tsp
  • Crushed black pepper - ½ tsp 
  • Chopped curry leaves - 6-7 
  • Oil for frying

Method

  • Soak urad dal in enough water for 4 hours. Do not over soak it.
  • Remove water and grind dal into thick and smooth paste by adding water into batches.
  • Transfer the urad dal paste into a large mixing bowl. Beat and mix the batter in a circular motion till they turn the light, this helps to incorporate air into the batter and make medu vada soft and fluffy.
  • Then add chopped green chilli, ginger paste, crushed black pepper, chopped curry leaves, & mix it well.
  • Now take a medu vada machine and make vada.
  • Heat oil and drop the vada in oil and deep fry the medu vada on medium flame.
  • Fry on both sides till they turn golden brown and crisp.
  • Serve hot medu vada with sambar or chutney.
