Kadhi

Description

Gujarati kadhi is a sweet-sour yogurt kadhi made without chickpea flour fritters. To all those who do not know, Kadhi is a yogurt-based gravy dish to which chickpea flour/besan is added, tempered and then simmered with spices. Ingredients & Method

Ingredients

  • Curd 1 cup
  • Besan ½ cup
  • Water (around 900ml)
  • Ginger chilli paste 1 tsp
  • Curry leaves 5-6
  • Salt to taste
  • Jaggery
  • Ghee 1 tbsp.
  • Oil ¼ tsp.
  • Cumin seeds ½ tsp
  • Cloves 5-6
  • Cinnamon stick 1
  • Dry red chilli 2
  • Cloves & Cinnamon powder 1 pinch
  • Cilantro leaves

Method

  • Add besan and curd in a bowl and add 600-700ml of water and blend it.
  • Once the ghee and oil is heated add cinnamon stick, cloves, cumin seeds, dry red chillies and curry leaves and roast it for 1-2 mint at low flame.
  • Now, add blended mixture and add salt as per taste
  • Add jaggery and mix it well
  • Keep on stirring kadhi in between
  • Then, add curry leaves, cloves & cinnamon powder.
  • Add cilantro leaves to kadhi after boiled for 10-12 minutes
  • Boil it for another 5 minutes
  • Kadhi is ready
