Ingredients

  • 2 pc – Capsicum (शिमला मिर्च)
  • 3 pc (tomatoes) – Tomato puree (टमाटरो प्यूरी)
  • 1 tbsp – Coriander seeds (धनिये के बीज)
  • 1 tsp – Turmeric powder (हल्दी पाउडर)
  • 1 tbsp – Garlic paste (लहसुन का पेस्ट)
  • 1 tbsp – Ginger chilli paste (अदरक मिर्च पेस्ट)
  • Salt as per taste (नमक स्वाद अनुसार)
  • 1 pc. – Bay leaf (तेज पत्ता)
  • ½ inch – Cinnamon stick (दालचीनी)
  • 7-8 pc – Black pepper corns (काली मिर्च के दाने)
  • 2 pc – Green cardamom (हरी इलायची)
  • 1 tbsp – Cilantro leaves (धनिया पत्ते)
  • 3 pc – Dry red chilli (सूखी लाल मिर्च)
  • 2 pc. (onion) – Onion paste (प्याज़ प्यूरी)
  • 2 pc – Chopped Onion (Cut into pieces) (प्याज)
  • 1 tbsp – Fresh cream (ताज़ा मलाई)
  • Oil (तेल)
  • 1 tsp – Cumin seeds (जीरा)
  • 1 tbsp – Red chilli powder (लाल मिर्च पाउडर)
  • 1 tbsp – Kasuri methi (कसूरी मेथी)
  • 200 grm – Paneer (पनीर)
  • 1 tsp – Garam masala (गरम मसाला)
  • 1 tbsp – Coriander powder (धनिया पाउडर)
  • Water as required (आवश्यकतानुसार पानी)

Method

    For Kadai Masala:
  • Take a pan and add spices: coriander seeds, dry red chili, black peppercorns, bay leaf, cinnamon stick, and green cardamom. Roast them for 2-3 minutes on low to medium flame. Transfer them into a bowl and let the spices cool down.
  • Once cooled, transfer them into a grinding jar and grind them finely. Your kadai masala is now ready.
  • For Veggies:
  • Heat oil in a pan, then add onions and capsicum and sauté them on low to medium flame. Transfer them to a bowl. In the same pan, add paneer cubes and shallow fry them, flipping occasionally to ensure a light brown color on all sides. Turn off the flame and transfer the paneer to a plate.
  • For Gravy:
  • In the same pan, heat 2 tbsp of oil. Add cumin seeds, ginger-chili paste, garlic paste, and onion puree. Sauté the onion puree well on low to medium flame. Next, add tomato puree and cook for 1-2 minutes on medium flame.
  • Now, add the sautéed veggies, red chili powder, turmeric powder, coriander powder, ½ tsp kadai masala, salt (as per taste), and garam masala. Mix everything well.
  • Then, add the fried paneer and mix it gently. Add one cup of water and stir well. Let it cook for 1-2 minutes on low to medium flame. Finally, add fresh cream and kasuri methi, and mix well. Garnish with cilantro leaves.
  • Your Kadai Paneer is now ready to serve. Turn off the flame and enjoy!
