Ingredients & Method

Ingredients

  • Coriander seeds – 2tbsp
  • Fennel seeds – 1 tbsp
  • Cumin seeds – 1 tbsp
  • Sesame seeds – 1 tbsp
  • Maida – 1 cup
  • Ghee – 2 tbsp
  • Salt to taste
  • Water – ¼ cup
  • Sugar – 1.5 tbsp
  • Dry mango powder – 1.5 tsp
  • Black salt to taste
  • Chaat masala – 1tsp
  • Garam masala – ½ tsp
  • Asafoetida – ¼ tsp
  • Kashmiri red chilli powder – 2 tbsp
  • Turmeric – ½ tbsp.
  • Black pepper powder – ½ tsp
  • Fried mung daal – ½ cup
  • Papdi – ½ cup
  • Sesame seed – ½ tsp (add into dry mixture)
  • Chopped raisins – 1 tsp
  • Chopped cashew nuts – 1 tbsp
  • Sweet Chutney – 1.5 tsp

Method

  • Take a pan, add coriander seeds, fennel seeds, cumin seeds, sesame seeds and roast it on low flame.
  • Turn off the flame, and keep it aside.
  • For making dough, take maida and add ghee, salt to taste and mix it well.
  • Add required water and make a soft dough, then keep it aside for 10-15 minutes.
  • Now, take roast masala and grind it in mixture jar
  • In that add sugar, dry mango powder, black salt to taste, chaat masala, garam masala, asafoetida, kashmiri red chilli powder, turmeric powder, and black pepper powder and grind it again
  • Now, take a jar add fried mung daal, papadi and grind it properly and mix with mixture and mix well
  • In ready mixture, add sesame seed, chopped raisins, chopped cashew nuts and sweet chutney as required and mix it well.
  • Now, make a ball of that mixture (medium size).
  • After resting, knead the dough once again and divide the dough in equal dough balls.
  • Now, flatten it with hands, use your thumb and finger to make a cup shape
  • Fill a stuffing and cover it and gently stretch it on upwards side and remove the extra dough.
  • And seal it properly. Same way prepares others kachori.
  • Fry it on medium flame and cook till they turns into golden brown.
  • Serve it with sweet chutney.
