Gatte ki Sabzi

Description

Gatte ki sabji is a popular gravy based dish from the rich, rustic and super flavorful Rajasthani cuisine. Gatta or gatte (plural) are gram flour (besan) roundels which are added to a curd based gravy. It makes for a delicious meal when paired with roti or chapati. Ingredients & Method

Ingredients

  • Gram flour (besan) – 250 gm
  • Carom seeds – 1 tsp
  • Red chilli powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Salt to taste
  • Baking soda – ½ tsp
  • Curd – ½ cup
  • Water – 3 tbsp + boiling
  • Salt – 1 tsp
  • Oil – 1 tsp
  • Clarified butter – 3 tbsp
  • Cumin seeds – 1 tsp
  • Asafoetida – 1 tsp
  • Dry red chilli – 2 no
  • Chopped onion – ½ cup
  • Ginger paste – 1 tbsp
  • Garlic chilli paste – 1tbsp
  • Tomato puree – ½ cup

Method

  • Take a bowl add gram flour, carom seeds, red chilli powder, turmeric powder, salt to taste, baking soda and mix it well. Now add curd and mix it properly and further add water and knead a dough. Cover and rest it for 10 minutes.
  • After rest knead dough again. Now take it one half and make thin long gatta. Put it in a plate.
  • Now take a heavy bottom pan, add water for boiling, salt and oil then, add gatta into it. Cover & boil it for 10-15 minutes. Open it and take them in a plate.
  • Further take a bowl put roll into the bowl and add left over water into it. Then cut gatta into small pieces.
  • Take another pan, add clarified butter, cumin seeds, asafoetida, dry red chilli, sauté it on medium flame.
  • Further add chopped onion and saute till onion gets light in color. Add ginger paste, garlic chilli paste and saute it on low flame.
  • Add tomato puree and mix it well. Take cur add red chilli powder, turmeric powder, coriander powder and add prepare curd into mixture. Mix it well.
  • Add gatta and also add left over water into it. Mix it well. Add salt and mix it again.
  • Cover and cook it for 10 minutes and open it and mix it well.
  • Add kasuri methi and add some cilantro leaves. Ready to serve.
