Description

“Gajar ka halwa” a popular Indian dessert which is carrot based, needs no introduction. It is believed that gajar halwa originated in the Indian state of Punjab and so it is even known by the name Punjabi gajar halwa. This Indian sweet dish has various other names like carrot pudding, gajar pak, carrot halwa etc. It is a delectable pudding made with grated carrots, milk, ghee, sugar and nuts of your choice. This delight is liked by everyone and we Indians really don’t need any special occasion to have it. Ingredients & Method

Ingredients

  • Carrots 2.20 lb.
  • Milk 4 cup
  • Clarified butter (Ghee) ¼ cup
  • Cream (Malai) ½ cup
  • Sugar 1 cup
  • Cardamom powder (Elaichi powder) 1 ½ tsp.
  • Raisins 3 tbsp.
  • Almond 3 tbsp.
  • Cashew nuts 3 tbsp.
  • Saffron 7 to 8 strands

Method

  • Heat the clarified butter (ghee) in a pan; add raisins and sauté for a minute.
  • Add shredded carrots and sauté on slow to medium flame for 7-8 minutes.
  • Mix it well with clarified butter (ghee).
  • Add boiled milk and saffron strands and keep on stirring it after every 4-5minutes
  • Keep stirring until the milk is absorbed completely.
  • Add cream (malai) once the half milk is absorbed.
  • Once 90% of milk is absorbed then add sugar to it and mix it well.
  • Mix it well, once the sugar gets completely mixed then add cardamom powder, almonds and cashew nuts and mix it well.
  • Check if there is no moisture left than halwa is ready, turn off the flame and now keep on mixing for 7-8 minutes so steam doesn’t turn to moisture.
  • Garnish it with dry fruits of your choice and it is ready to serve.
