An extremely popular gujarati street food snack recipe made with indian pav bread and stuffed with a unique blend of masala. Take a pan, and add coriander seeds, cumin seeds, bay leaf, black pepper corn, cloves. After that, add black cardamom, cinnamon stick and red chillies. Roast all the whole spices on low to medium flame. Don’t cook too much, otherwise masala get burn.
Turn off the flame and take the masala in a plate. Roast the masala nicely for 2-5 minutes. Now in same pan, add white sesame seeds and dry grated coconut. Roast on low flame for 1 minute.
Roast dry coconut and sesame seeds separately. After 1 minute. Turn off the flame and take them in a same plate. Let all the spices cool down for 5 minutes.
After 5 minutes, take jar add roast spices. Cover and grind it nicely. Open the lid and take masala in a plate.
Add dry mango powder for some sour taste and add sugar for sweet taste. Lastly add oil and mix it well. Dabeli masala is ready to serve.
