Basically a sweet and savoury spicy snack or mixture recipe prepared from crunchy cornflakes. it can be prepared as Diwali snacks or as a munching snack for evening tea. compared to traditional kerala or bombay mixture recipe which is prepared from besan, it is a healthy snack from corn. Ingredients & Method

Ingredients

  • Raw corn flakes – 2 cup
  • Oil – for deep frying
  • Raw peanuts – ¼ cup
  • Dry coconut slices – 9 to 10
  • Black raisins – 2 tbsp
  • Curry leaves – 10 to 12
  • Salt to taste
  • Powdered sugar – 2 tbsp
  • Citric acid – ½ tsp

Method

  • Heat sufficient oil in a kadai, deep fry the raw corn flakes till they expand, become golden and crisp. Drain on an absorbent paper.
  • In the same hot oil, deep fry peanuts till crisp and crunchy. Drain on an absorbent paper.
  • Deep fry coconut slices till crisp and crunchy. Drain on an absorbent paper.
  • Deep fry raisins till they puff up, drain on an absorbent paper. Add curry leaves and deep fry till crisp. Drain on an absorbent paper.
  • In a large bowl, add fried corn flakes, peanuts, curry leaves, dried coconut, and raisins. Sprinkle salt, sugar, citric acid and mix well.
  • Crispy and crunchy Corn Chivda is ready to serve.
