Veg Spring Rolls

Description

An easy, tasty and a crispy snack recipe made with mixed vegetable stuffing wrapped in thin translucent roll sheets. It is a non-native vegetarian snack recipe inherited from the asian cuisine but has been widely accepted. These are generally served as a starter or appetiser before any indo chinese meal, but can also be served next to samosa or pakora for any party and occasions. Ingredients

    For making dough:
  • Wheat flour – 2 cup
  • Salt – 1 tsp
  • Oil – 1 tsp
  • Water as required
  • For vegetable stuffing:
  • Oil - 2 tbsp
  • Ginger (chopped) – 1 inch
  • Garlic (chopped) – 1 tbsp
  • Spring onion bulbs (chopped)- 1 tbsp
  • Onions (sliced – ½ cup
  • Carrots (julienned) – ½ cup
  • Cabbage - 1 cup (shredded)
  • Capsicum (julienned) – 1 cup
  • Salt – 1 tsp
  • Green chillies sauce – 1 tsp
  • Red chilli sauce – 1 tsp
  • Ketchup – 1 tbsp
  • Soy sauce – 1 tsp
  • Vinegar - 1 tsp
  • Kashmiri red chilli powder – 1 tsp
  • Sugar – 1 tsp
  • Oil for frying

Method

    For making dough:
  • Take a bowl, add wheat flour, salt, oil and mix well. Then add water as required and knead semi soft dough. Cover and rest it for 10 – 15 minutes.
  • For stuffing:
  • Now, take a pan add oil, ginger, garlic, spring onion bulbs & sauté it for a minute. Further add onion and mix it. Add carrot, cabbage, capsicum and mix it.
  • Then add green chilli sauce, red chilli sauce, soy sauce, vinegar, ketchup and mix it well. Add salt, sugar, stir and cook on high heat for 1 – 2 minutes.
  • After rest the dough pour oil & knead it again. Then take half portion from dough and make a medium size dough ball. Coat dough ball with flour & roll it nicely. Add some flour and roll it again.
  • Now, put roti it on a tawa & cook semi cooked roti. And keep it in plate. Same way prepares other roti.
  • Take a semi cooked roti. Apply maida slurry on the edges. Further add sufficient amount of vegetable filling. Start to fold nicely. Roll tightly to keep the filling intact.
  • Apply little slurry in the edges. Roll to seal the edges. Keep it in a plate. Make all the spring rolls in same way.
  • Drop in the spring rolls in hot oil. Fry rolls on medium heat until crisp & golden brown in color. Take them out. Same way prepares other rolls.
  • Hot & crispy spring rolls are ready, cut them in pieces and serve them.
