Ingredients & Method

Ingredients

  • Wheat flour – 500 grams
  • Salt – to taste
  • Oil – 1 tbsp + 1 tbsp
  • Cumin seeds – 1 tsp
  • Ginger chilli paste – 1 tbsp
  • Grated carrot – 1 cup
  • Grated cabbage – 1 cup
  • Boiled peas – ½ cup
  • Boiled potatoes – 4-5 nos.
  • Red chilli powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Turmeric powder – 1 tsp
  • Dry mango powder – 1 tbsp
  • Cilantro leaves – 1 tbsp
  • Fresh mint leaves – 1 tsp (chopped)
  • Garam masala – 1 tsp
  • Grated cheese – as required

Method

  • Take a bowl, add wheat flour, salt, oil and mix it once. Now add required water and knead a semi soft dough. And then cover and rest it for 15-20 minutes.
  • Further, take a pan, put oil and add cumin seeds. Once it crackles, add ginger chilli paste and sauté for a while.
  • Then add grated carrot, grated cabbage and mix well. Afterwards add boiled peas and again mix it. Then add boil potatoes and mix everything properly.
  • Now add red chilli powder, coriander powder, turmeric powder, dry mango powder, cilantro leaves, fresh mint leaves, salt as per taste and mix everything properly.
  • Furthermore, add garam masala and mix it well on low to medium flame. After that add cheese and again mix it well.
  • Take a dough add oil and knead it once. Then divide into small equal roundels and coat with dry flour and roll it with rolling pin.
  • Now fill a spoonful of vegetables mixture in the cavity, but do not over fill it. After that seal the dough balls by joining the sides together.
  • Now, coat the dough balls once again with dry flour and roll the dough ball into thick paratha.
  • Cook the paratha on a hot pan form the both sides until brown spots appear. Apply oil, flip and cook on both the sides. It’s ready to serve.
