Swaminarayan Khichadi

Description

Swaminarayan khichdi is a Gujarati dish and it is full of vegetables, which makes it healthy. It is prepared without onion and garlic. It is very tasty and light dish without any strong spices. Ingredients & Method

Ingredients

  • Rice ¾ cup
  • Toor dal ½ cup
  • Moong dal ½ cup
  • Ghee 2 tbsp.
  • Oil 1 tsp.
  • Mix veggies (eggplant, cabbage, potato, carrot, pigeon peas or peas)
  • Green bell pepper 1
  • Tomato 1 (chopped)
  • Curry leaves 4-5
  • Peanuts (If you want)
  • Ginger chilli paste 1 tsp.
  • Turmeric powder 1 tsp.
  • Red chilli powder 2 tsp.
  • Salt to taste
  • Sambar masala 1 tbsp.
  • Mustard seed ½ tsp.
  • Cumin seeds ½ tsp.
  • Cinnamon stick medium size
  • Cloves 5-6
  • Black pepper corn 5-6
  • Dry red chilli 2-3
  • Bay leaf 1
  • Star anise 1
  • Water 6 cups

Method

  • Mix rice and both the dals in a bowl, mix it well and wash it twice.
  • Add 2 cups of water and soak rice and dals for 10 minutes.
  • Make coarse paste of green chilli and ginger.
  • Heat ghee and oil in a cooker and once it is heated add cinnamon stick, cloves, black pepper corn and star anise.
  • Then add bay leaf and dry red chillies.
  • Add mustard seeds and cumin seeds.
  • Once the tempering is ready add green bell pepper and ginger chilli paste and mix it well.
  • Add chopped vegetables and mix it well at high flame for 1-1.5 minutes
  • Add turmeric powder, red chilli powder, and salt and sambar masala.
  • Now mix it well for 1-1.5 minutes.
  • Add tomato once it is mixed well.
  • Now add the soaked rice and dals with water and add 3 cups water more.
  • Mix it and over the lid till 4 whistles at medium flame.
  • After 4 whistles open the lid and add coriander leaves, ghee 1 tsp. and 1 cup of lukewarm water and mix it well
  • Close the lid and wait for 5-10 minutes
