Ingredients & Method

Ingredients

  • Oil – 2 tbsp + 4 tbsp
  • Lady fingers – 5 to 6 no
  • Cluster beans – 5 to 6 no
  • Asafoetida – 1 tsp
  • Mustard seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Fenugreek seeds – 1 tsp
  • Curry leaves – 5 to 6
  • Gram flour (besan) – 5 tbsp
  • Water – 2 cup
  • Tomatoes (chopped) – 2 no
  • Turmeric powder – 1 tsp
  • Red chilli powder – 2 tsp
  • Salt to taste
  • Drumstick – 2 (cut into pieces)
  • Potatoes – 2 no
  • Ginger (finely chopped) – 1 inch
  • Green chillies (chopped) – 2
  • Tamarind pulp – 2 tbsp
  • Water – ½ cup

Method

  • Heat oil in a non-stick pan, add lady fingers, cluster beans and sauté for a minute. Transfer to the plate and set aside.
  • Now take a heavy bottom pan, add oil, asafoetida, mustard seeds, cumin seeds, fenugreek seeds, curry leaves and sauté well.
  • Further add gram flour, stir till the mixture thickens. Then add water and stir to mix.
  • Add chopped tomatoes, mix it. Now add turmeric powder, red chilli powder, Salt to taste and mix well.
  • Then add drumstick, potatoes, add roast vegetables and mix well. Further add ginger, green chillies, tamarind pulp and cook it on medium flame.
  • Now add water half cup and mix well. Cover and boil it for 10 minutes. After boil add some cilantro leaves. Mix well and simmer for a minutes.
  • Serve hot with steamed rice.
