Ingredients

    For Sambar:
  • Toor dal - ¼ cup + water as required
  • Oil - 1 tbsp
  • Chopped onion - 2 medium size
  • Green chilli slits - 2
  • Ginger paste - 1 tsp
  • Tomatoes - 2 chopped
  • Turmeric powder - ½ tsp
  • Kashmiri red chilli powder – ½ tsp
  • Chopped bottle gourd pieces - ½ cup
  • Carrot pieces - ½ cup
  • Drumstick pieces – 1 nos
  • Brinjal pieces – 1 nos
  • Water – 3 cup
  • Salt to taste
  • Special sambar masala paste – 2 tbsp
  • Tamarind pulp – ¼ cup
  • Jaggery - 2 tbsp
  • Cilantro leaves
  • For Sambar Tempering:
  • Oil – 1 tbsp
  • Mustard seeds - 1 tsp
  • Fenugreek seeds – ¼ tsp
  • Dry red chilli – 3
  • Asafoetida – 1 tsp
  • Curry leaves – 4 to 5
  • Special masala paste for sambar:
  • Red chilli powder – 1 tbsp
  • Garam masala – 1 ½ tsp
  • Tomato – 1 nos.

Method

    For making Sambar:
  • Firstly, take a bowl add toor dal, water and wash it properly. Remove water from it.
  • Again add water in it and wash it. And then again remove water from it.
  • In a pressure cooker, add oil, onion, green chilli slits, ginger paste, chopped tomatoes, turmeric powder, red chilli powder, chopped bottle gourd pieces, brinjal pieces, carrot, drumstick, curry leaves and mix everything well. Now, add water and mix it well.
  • Now, take a mixing jar add red chilli powder, garam masala, tomato and make a fine paste.
  • Then, add dal mixture into the pressure cooker and mix it well. Close the lid and cook it for 5 minutes. Then, open the lid and mix it well. Add water as needed and mix it properly.
  • Now, add jaggery, tamarind pulp, salt to taste, prepared sambar masala paste and mix everything properly. Boil it for 2 – 3 minutes on medium to low flame.
  • For tempering, take a small wok add oil, mustard seeds, fenugreek seeds, dried red chilli, curry leaves, asafoetida and pour the temper into sambar & mix it well. Cook for 5 to 8 minutes on medium to low flame.
  • Garnish sambar with cilantro leaves and serve it.
