Masala Bhindi

Description

This is a semi-dry preparation featuring the star ingredient okra pods (bhindi in Hindi), piquant onions, tangy tomatoes, bold Indian spices and herbs. It is one of the most popular dishes served in almost all restaurants too, of North India. Ingredients

  • Lady finger – 500gm
  • Garlic chutney – 2 tbsp
  • Coriander powder – 2 tbsp
  • Asafoetida – 1 tsp
  • Turmeric powder – 1 tsp
  • Salt to taste
  • Crushed peanuts – 1 tbsp
  • Sugar – 1 tsp
  • Crushed ganthiya – 1 tbsp
  • Grated coconut – 1 tbsp
  • Oil for frying + 1 tbsp
  • Fresh cilantro leaves – 1 tbsp

Method

  • Take lady finger and cut the head from the top. Cut in two halves. And put an incision in between. Same way prepare all lady fingers. Keep it aside.
  • Now take a bowl add garlic chutney, coriander powder, turmeric powder, asafoetida, salt to taste, crushed peanuts, sugar, crushed ganthiya, grated coconut and mix everything well. Keep it aside.
  • Now take a heavy bottom pan, heat up the oil and fry the lady finger until half cooked. Remove them.
  • Further take mixture in a bowl, add fry lady finger into it. Pour heat oil into it. Mix it properly. Fresh cilantro leaves and add some grated coconut and mix it again.
  • Your bhindi masala is ready to be served, serve hot with roti or paratha.
