Malpua
Description
Malpua is a traditional North Indian sweet of sugar syrup coated pancakes made with all-purpose flour, curd (yogurt), spices, khoya (dried milk solids) and topped with nuts. Malpua recipe is often made during festivals, special occasions and are a street food as well. Soft and fluffy on the inside, yet crisp and lacy on the outside, these syrup dipped pancakes are a real treat – especially when you serve them with Rabri! Ingredients
- Wheat flour – 2 cup
- Jaggery – 1 cup
- Cardamom powder – ½ tsp
- Fennel powder – 1 tsp
- Semi crushed black pepper – ½ tsp
- Poppy seeds
- Pista slits
- Water – 3 cup
Method
- Take water in a pan then after one boiling add jaggery in it and stir it till jaggery melt in water properly.
- Turn off the flame and keep it aside for cool down for 20 to 25 minutes.
- After resting the jagger water, take a bowl add wheat flour in it and mix it well with the help of whisker or a spoon.
- Batter should have thick and pouring consistency.
- Now, in ready batter add cardamom powder, fennel powder (its brings good fragrance in it), semi crushed black pepper and now mix everything properly.
- Now, take a pan make malpua on it. Then apply ghee on edges and now, turn the other side and again apply ghee.
- Cook till they turn into golden brown. Now take them out.
- Lastly garnish with poppy seeds and pista slits.
