Makai Vada

Description

Makai vada or dhebra is a traditional Gujarati recipe made with makai flour (cornmeal) and regular spices. It is a crispy and soft deep-fried snack loved by kids and all age groups. It is also known as makai na dhebra and required very less ingredients to make it. You can add fenugreek leaves in vada dough to make it healthier. Ingredients & Method

Ingredients

  • Maize flour – 2 cup
  • Turmeric powder – ½ tsp
  • Sesame seeds – 2 tbsp
  • Carom seeds – 1 tsp
  • Red chili powder – 1 tsp
  • Salt to taste
  • Wheat flour for binding– 2 tbsp
  • Grated jaggery – 2 tbsp
  • Ginger, garlic, and chili paste – 1 ½ tbsp
  • Fenugreek leaves – ½ cup
  • Chopped cilantro leaves – ½ cup
  • Oil – 1 tbsp
  • Curd – 1 cup

Method

  • In a bowl, take maize flour then add turmeric powder, sesame seeds, carom seeds, red chili powder, salt to taste, and wheat flour for binding and mix it well.
  • Now, add grated jaggery, ginger, garlic, and chili paste and mix it again.
  • Then add fenugreek leaves, chopped cilantro leaves and mix it well. Now add oil and mix it.
  • After that add curd for binding, and make a soft dough. Cover the dough and rest it for 2 to 3 hours.
  • Now grease your palm with oil and make small vada. Flatten them.
  • Once oil get hot add vada and turn into medium flame and fry both the sides till golden brown.
  • Take them out. And it’s ready to serve.
