Description

Lilva Kachori is the famous snacks made during the winter months which is extremely famous in the city of Ahmedabad and Valsad. Gujarati fresh tuvar dana kachori is a traditional kachori made with a stuffing of fresh toovar and green peas perked up with ginger and green chillies. Ingredients & Method

Ingredients

  • Maida – 1 cup
  • Wheat flour – ½ cup
  • Salt to taste
  • Oil – 2 tbsp
  • Water as required
  • For stuffing:
  • Fresh Tuver – 1 cup
  • Green peas – ½ cup
  • Green chillies – 2 to 3
  • Ginger – 1 inch
  • Oil – 1 tbsp
  • Cumin seeds – ½ tsp
  • Asafoetida – ½ tsp
  • Sesame seeds – 2 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 1 tsp
  • Sugar – 2 tsp
  • Garam masala – 2 tsp
  • Red chilli powder – 2 tsp
  • Salt to taste
  • Fruit salt – a pinch
  • Lemon juice – ½ tsp
  • Grated coconut – ½ cup
  • Raisin – 1 tsp

Method

  • Take a bowl, add maida, wheat flour, salt to taste, and oil. And mix it well.
  • Now add water as required and make a smooth & soft base dough. Then add oil on it & knead it properly, now cover it and rest it for 30 minutes.
  • Take a mixture jar, add fresh tuver, green peas, green chilies, ginger, and grind it into coarse mixture.
  • Take a pan and get heated on medium flame, now add oil, cumin seeds, sesame seeds and stir it for 1 minute.
  • After that add lilva coarse mixture in it. And mix it properly.
  • Then, add turmeric powder, coriander powder, sugar, garam masala, red chilli powder, salt to taste, fruit salt, lemon juice and mix it well.
  • Now, add grated coconut and mix it well. After that add raisins and mix it properly.
  • With the help of hand make a small balls of stuffing.
  • After resting, knead the dough once again, and divide the dough in equal dough balls
  • Make a small dough ball & make it medium size with rolling pin.
  • Now add stuffing in it and seal it properly from the edges. Same way prepares other kachori.
  • Take oil in a wok, add kachori in it and fry on medium flame till they turn into golden brown.
  • Make sure your flame is on medium to low flame. Take them out.
  • Ready to serve.
