Gond Pak

Ingredients & Method

Ingredients

  • Edible gum (Gond) - 1 cup
  • Clarified butter (ghee) - 4 tbsp + 2 tbsp
  • Wheat flour - 1 cup
  • Jaggery - 1 cup
  • Desiccated coconut - ½ cup
  • Chopped cashews - 1 tbsp
  • Chopped almonds - ½ tbsp
  • Cardamom powder - 1 tsp
  • Peepramul powder (ganthola powder) - 1 tbsp
  • Dry ginger powder - 1 tbsp

Method

  • Take a heavy bottom pan, add clarified butter (ghee), now add edible gum (gond) and fry on medium flame till they puff. Fry gond in batches. Take them in a plate.
  • Slightly roast cashews and almonds in ghee. And take them in plate. Further add desiccated coconut and roast on low flame.
  • Now, in the same pan add ghee and wheat flour . Mix it properly. Crush the gond using your bowl or with your hand.
  • In pan, add mava and roast it till the ghee separates from its sides. Then add roasted ingredients into it. Mix everything properly.
  • Now in a pan, add ghee and jaggery. Mix well and cook till jaggery melts it properly.
  • Switch off the gas, add dry ginger powder, Peepramul powder (ganthola), cardamom powder and mix it well.
  • Further add jaggery mixture into the gond pak and mix well. Grease the plate with little oil, and add gond pak mixture. Allow mixture to set for 1 hour.
  • Cut into pieces and enjoy gond pak for a month when stored in an airtight container.
