Description

Besan chilla are simply aromatic spiced and protein packed gram flour pancakes from north India. In Gujarati this besan cheela is popularly known as Pudla. Quickly made with handful pantry staples this colourful dish is ready to serve to the plate. Because of the colour and texture besan ka chilla is also popularly known as vegetable omelette. Ingredients

• Besan (gram flour) 1 cup

• Turmeric powder ¼ tsp.

• Ajwain (caraway seeds) ¼ tsp.

• Salt to taste

• Finely chopped onion ½ cup

• Finely chopped cilantro 2 tbsp.

• Chopped tomato ½ cup

• Chopped ginger 1inch

• Chopped green chilli 1

• Oil 5 tbsp.

• Water ½ cup

Method

• Firstly, in a large mixing bowl take 1 cup besan.

• Add turmeric, ajwain and salt to taste. Additionally, add water.

• Mix with the help of whisk to form a smooth batter.

• Furthermore, add in onion, tomato, chopped cilantro, ginger and green chilli, mix it well.

• Mix well with the help of ladle and get to a flowing consistency batter.

• Further, pour a ladleful of batter onto a hot tawa and spread gently.

• Pour a teaspoon of oil over chilla.

• Allow to cook on medium flame.

• Now flip the chilla and cook both sides.

• Finally, fold the besan chilla and serve with green chutney.
